This Festive Cocktail – A Recipe

WHere is an easy version of a drink from the seasonal menu. Designed as a batch prepared mix that's loaded with essence associated with holiday season, which makes it excellent for a celebration. Reserve the remaining syrup you can use for brunch beverages, sweets, or to make another batch of the drink.

The Bikini Cocktail

Yields 10 guests

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Put the listed ingredients in a pot, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, turn off the stove allowing it to reach room temperature entirely. Transfer into an sterilised bottle, cap it and refrigerate it in the refrigerator, it can be stored for around four weeks.

To make Batch Mix: Combine all the liquids in a large bottle, let it rest for one hour, then pass it through preferably using cheesecloth, so it's fully clarified.

For serving: Measure 85ml from the batch mix into a stirring glass packed with ice, gently stirring carefully for one minute to cool it down. Filter to a cold coupe glass or equivalent, top with a few cranberries and finish using a quick spritz of the essential oil over the top.
